I haven’t blogged for a long time – it must be nearly two weeks. It’s been a bad combination of university exams, computer problems, camera problems (it’s in for repair, hence no photos) and being sick. But here’s a great recipe – simple and quick. When you are cooking for one, it can be very difficult to get up the energy to make anything interesting. Or anything at all. It is far easier to eat the takeaways, eggs, corn chips, or, if you are a true student, the instant noodles. Here is delicious version of that student classic. It is almost as fast, and in another league for health and flavour. Nice food doesn’t have to take a long time.

    

Vermicelli with Lime and Chili (serves one)

Handful of vermicelli, or thin rice noodles

1 cup fresh coriander

2 tablespoons lime juice

1 tablespoon soy sauce

1 dessert spoon brown sugar

pinch chili powder

oil, preferably sesame, for frying

 

Soak the noodles, according to packet directions, until soft. Heat the oil in a pan, then add the noodles, lime, sugar, chili and soy sauce. Fry for a minute, until hot and the flavours are mixed. Mix with the coriander, and serve.
