This is another one of my salad posts. I don’t make salads all that often, but every time I do I realise how delicious they are, and get very excited. Salads are so quick, and they can be so fun, filling and interesting. They have been so stigmatised by the “lettuce and four limp tomatoes” type of salad. This takes about one and a half minutes to make, and is a satisfying lunch. Bean-sprouts are so refreshing, lime juice so wonderful and tropical, and chickpeas so tasty. An unbeatable mix.

Chickpea and Bean-Sprout Salad (serves one)

1/3-3/4 cup chickpeas

1/2 cup bean-sprouts

1/2 lime, juiced

pepper to taste

A few leaves of fresh coriander

 

These amounts are all fairly approximate. Toss and serve.
